Daily Brownie


Give us this day our daily brownie! It's been hard work, but we have been in search of just the right brownie recipe for a long time. Ironically, we wanted a scratch recipe that turned out like the mix in a box - nice and fudgy on the inside with a crisp top. We have found some great ones - including a yummy recipe from Lindsay. But this recipe hits all the criteria - using cocoa instead of melted chocolate, fudgy, and crisp top.

So here is our current favorite brownie recipe:

1 1/2 cups unsalted butter
3 cups sugar
1 Tbsp. vanilla
6 eggs, slightly beaten
1 1/2 cups flour
3/4 cup unsweetened cocoa powder, sifted
3/4 tsp. salt
2 cups seminsweet chocolate chips
1 1/2 cups chopped nuts, toasted

Lightly grease 11"X15" baking pan

Melt the butter in microwave. Whisk in sugar, vanilla, and eggs, blending well.

Mix in flour, cocoa, and salt, mixing well. Add chocolate chips and nuts. Spread into prepared pan. Bake for 30 minutes at 350 degrees, or until a toothpick inserted near the center comes out with a few moist crumbs attached. Don't overbake!

This recipe can be cut in half and baked in a 9"x9" pan. Start checking for doneness at about 25 minutes.
